The Experiment Continues

I swear this is not intentional.  Well, intentional meaning I did not decide one day that I am never ever again going to consume animal byproducts or items containing gluten.  I have made the conscious decision that I don’t want any of the aforementioned.  Aside from one dinner out with Matt, and some kefir, I have not had anything that comes from an animal.  And I would say that 95% of the time I have been able to avoid food with gluten.  I know I will have a hankering for baked goods, chicken, sushi, shrimp spring rolls, whipped cream, banana bread and spaghetti.  But I have been enjoying this fresh adventure.

I have been housesitting for my sister this weekend.  Nights alone give me a chance to experiment with new ingredients and recipes, stay up late, take pictures of food, and have a glass (or two) of wine, and then write about it without disturbing the rest of the house.  The palates at home are diverse.  They are also very honest.  But this new adventure of mine might bring some furrowed brows.  So experimenting on myself first might be best.  But, unfortunately what I have made has been totally share-worthy, and I have nobody to share with.

This morning I made a banana, pear, spinach smoothie inspired by this recipe at  Here is my version:








Spinach Pear Banana Smoothie
Makes 2 servings
1 1/2 tsp Coconut Cream Concentrate
1 1/2 cups water
1 banana (I used a frozen banana that I defrosted for a minute before adding to the blender)
1-2 cups fresh spinach leaves
1/2 pear chopped
2 pitted dates
8 oz plain yogurt (I used plain coconut yogurt)

Place all ingredients in a blender and blend until smooth.  Makes 2 servings.

Last night I made an avocado hummus grilled cheese sandwich from Kale With Love.  My sister’s waffle maker was a great substitute for a panini press.   My sister had made a tomato, red onion, red bell pepper and corn salad.  I sauteed some spinach, garlic and brown rice and added the tomato salad to the pan to heat it through and combine everything.  So good!

For dessert I made this Kiwi Lime Pudding.  So fresh and creamy.  It was hard not to eat the entire thing!
